Watermelon and Avocado Salad

This salad is a really special combination of some of our favorite flavors. Sweet, juicy watermelon, creamy, tart goat cheese, lovely avocado and sweet balsamic vinegar.

We topped this salad with pepitas (pumpkin seeds) that we roasted in sea salt instead of salting the watermelon. It is so good!


  • 1 lb arugula
  • 1 cup crumbled goat cheese (if you can find the honey goat cheese, use it)
  • 1/4 T pepitas
  • 1 tsp sea salt
  • 1 ripe avocado
  • 2 cups chunked watermelon
  • 1 cup baby lettuce mix
  • Drizzle of Balsamic glaze (store bought is fine)
  • 1 tsp olive oil

How to:

In a small bowl, toss the olive oil, sea salt and pepitas. Toast on a baking pan in a 350 degree oven for 15 minutes. (set aside)

Combine the arugula, baby lettuce and goat cheese in a large bowl. Add the watermelon and gently toss. Plate the salad and add a few slices of avocado to the top. Top with pepitas and a drizzle of balsamic glaze.
