Super Seed Cookies

Are these the most delicious looking cookies? I know they aren’t beautiful in the “typical” way. They aren’t oozing with chocolate or caramel but they are super crunchy, filled with seeds and plenty of them! After watching 3 episodes of my latest Netflix addiction, I got myself off the couch and decided to whip up something yummy and crunchy. These cookies were simple to make, require very little attention and if you need to substitute seeds, it’s totally fine!

Ingredients:

  • 1 C Whole Wheat Flour
  • 1 Large Egg
  • 2 1/4 C Whole Grain Old Fashioned Oats (don’t use quick oats)
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 3/4 sticks salted butter softened but not melted
  • 1 C light brown sugar
  • 1/4 C tahini
  • 3 T hemp seeds
  • 3 T chia seeds
  • 3 T sesame seeds
  • 1 tsp kosher salt for topping

How to:

Beat together the softened butter & sugar until combined. Add the egg and tahini, beat another 30 seconds. In a large bowl combine the flour, soda, powder. Add to the wet ingredients and mix just until combined. It’s ok if there are some dry spots. Don’t over mix. Add the seeds and oats. Stir just until they are combined (30 seconds or so)

Scoop using a #12 disher (ice cream scoop) and bake on a parchment lined cookie sheet spacing the dough 2-3 inches apart as they will spread a lot.

Top with a sprinkle of kosher salt.

Bake 14 minutes (rotate pan half way through) at 350 degrees.

These cookies will be crispy and flat and delicious!
