Sriracha Eggs with Potatoes and Spinach

Did you know there was a single packet of Sriracha sauce listed on ebay for $10,000? There were claims being made it was the last packet of sauce ever to be manufactured! Thankfully, that turned out to be a hoax and you can continue to find Sriracha sauce in abundance all over the world.  This dish combines potatoes, egg whites and a drizzle of Sriracha for that extra little punch you sometimes need in the morning!


  • 1 egg white
  • 1/2 diced potato
  • 2 T diced onion
  • 1/4 C diced ham or sausage
  • 1 C baby spinach (fresh)
  • 1 drizzle of Sriracha sauce

How to:

Saute the potato and onion until soft. Add the ham or sausage and heat until it reaches your desired temperature. In another pan, scramble the egg white. Place the fresh spinach leaves in a bowl, add the hot potato, onion, egg white and ham mixture. Top with a drizzle of Sriracha. The hot ingredients will soften the fresh spinach leaves. Enjoy!
