Roasted Sweet Potatoes with Tahini Drizzle
Aren’t these gorgeous? We know…We could have been a little bit fancier about the presentation but we couldn’t even wait another minute to eat these! If you haven’t noticed the Tahini craze lately, it’s time to get your head in the game and tune into social media. Tahini, ground sesame seed paste, is being used in so many amazing recipes. It’s healthy and delicious. Tahini adds a depth of flavor to salads, side dishes, smoothies, grilled meats and Sweet Potatoes!
- 2 Sweet potatoes baked and cut in half after baking
- 2 T tahini
- 1 T finely chopped cilantro (optional)
- 1 dash of salt
Bake your sweet potatoes using your preferred method. Cut in half and using a fork, just scrape up a bit of the potato so the tahini can soak in. Drizzle with the tahini, sprinkle the cilantro over the top and finish with a crack of sea salt. This would also make a great potato salad! Hmmm…something to think about for next time!
