Roasted Peach and Crunchy Date Breakfast Bowl

If you follow foodies on Instagram, Pinterest, or Tumblr you may notice a ton of recipes being posted lately for Breakfast Bowls. There seems to be a movement and we are happy to be a part of it. Breakfast Bowls typically combine hot, cooked grains, fruits, nuts and seeds.

Another reason Breakfast Bowls are becoming even more popular, you can use practically anything you like in them! Try your own variation or the one below:


  • 1/2 C Gluten Free Rolled Oats
  • 1 C water
  • 1/4 C Greek Yogurt
  • 2 T chopped dates
  • 1/2 of a peach, sliced
  • Coconut Oil (to coat pan)
  • 1 T maple syrup (or sweetener of choice)
  • Dash cinnamon

How to:

Prepare the oats either in the microwave or stovetop, according to the package directions. In a small saute pan, add the coconut oil and heat to medium. Add the sliced peaches and chopped dates. Cook, tossing gently so they do not burn, 5 minutes. The peaches should be slightly soft and a little browned on each side. The dates should be softer and a little crunchy.

Add the yogurt, fruit and maple syrup to the oatmeal, top with a dash of cinnamon and enjoy! These flavors really compliment each other and the roasted dates are a yummy, crunchy sweet treat on top.
