Mocha Chip Muffins with Nutella Glaze


  • 2 C flour
  • 2 Eggs
  • 1/2 C butter (softened)
  • 1 C mini chocolate chips
  • 1/2 C cold, brewed coffee (stronger the better)
  • 1 T baking powder
  • 2 C sugar
  • 1/4 C Nutella
  • 1/3 C powdered sugar
  • 1-2 T brewed coffee (cold)

How to:

With a wooden spoon mix the softened butter and sugar together. Whisk in the eggs, brewed coffee and combine. Slowly add the flour and baking powder. Stir in the chocolate chips just until everything comes together. The dough will not be very lumpy. It should be smooth but not over mixed. It’s really important to know the difference between over mixing the batter and combining. That’s why it is not recommended to use a paddle mixer for this recipe. Hand mix and it should work out just fine.

Scoop using a #12 disher (ice cream scoop) or fill lined muffin tins 2/3 way. Bake approx 18-22 minutes at 350 degrees. When the muffins are springy to the touch, remove and cool.

While they are cooling, you can make the glaze. Whisk together the glaze ingredients until smooth. When the muffins are cool, dip the top of the muffins into the glaze. Hopefully, the glaze will drip down the sides of the muffins like mine did  They look great and taste so good!!
