Leftover Sweet Potato Fry Waffle

These lucky leftovers turned into a crispy, deliciously creamy Sweet Potato Fry Waffle with a little cinnamon sugar sprinkle and honey mustard maple syrup. Yep…they were incredible! If you don’t have sweet potato fries, try regular fries. After all, why not?
Ingredients:
- 2 C sweet potato fries mashed slightly
- 1 beaten egg
- 1 tsp cinnamon
- 1 T sugar
- 1 T honey mustard dressing
- 2 T maple syrup
How to:
Smash your fries up with a fork or potato masher until they resemble a very lumpy mashed potato. Stir in the beaten egg. Using your waffle iron, spoon the thick, lumpy mixture into the iron. Follow your waffle iron’s directions for the appropriate cook time.
When they are done, remove and top with cinnamon sugar. Stir the honey mustard and maple syrup and pour over the top. So good!!!
