Lavender Lemon Cookies

Who wouldn’t love to receive these beauties as a gift? They are easy to make and the combination of bright, tart lemon and lavender is absolutely perfect. With no added sugar in the cookie (the frosting is sweet enough) you can eat a few of these without feeling too guilty. 

Ingredients:

  • 1 1/4 C white flour
  • 1 stick softened butter
  • Juice of 1/2 lemon
  • lemon zest
  • 2 T lavender
  • 1 C confectioners sugar
  • 1 egg
  • Dash of salt
  • 2 T milk

How to:

In a mixer on low speed, combine the softened butter, flour, salt and lemon juice. Mix until combined slightly. Add the egg and mix until a dough ball forms. Remove and wrap in plastic wrap. Refrigerate overnight. Remove dough from refrigerator and roll out to 1/4 inch on a lightly floured surface.

Cut with cookie cutters and place the cookies on a parchment lined cookie sheet. Bake at 35o degrees 11 minutes. Rotating the pan half way through. Remove and cool on cooling rack. While the cookies are cooling, mix the confectioners sugar, lavender. Add 1-2 tablespoons of milk. Starting with 1 tablespoon and stirring until frosting is spreadable. You may not need the 2nd tablespoon of milk.

Once the cookies are cool, spread the frosting to the edge, using a metal spatula. Sprinkle with lemon zest and enjoy!
