Emily’s Italia Salad

Once our friend Emily took a trip to Italy and she sent us this recipe to post on the blog. She said she was so inspired while exploring the best ingredients in Italy. All of the oranges were blood oranges and deliciously fresh. The Arugula and fennel was fresh and full of flavor, not to mention organic!


  • 1 head of radicchio, chopped
  • 1 pound of arugula
  • 1 bulb of fennel cut into strips
  • 2 green apples, chopped
  • 1/2 red onion cut into thin slices
  • 1 blood orange, segmented
  • 4 chopped dried figs
  • 1/4 C chopped toasted walnuts
  • Juice of 1 lemon
  • Olive Oil
  • Sea Salt
  • Fresh cracked pepper

How to:

Combine all ingredients in a large bowl. Whisk together the lemon juice and olive oil. Dress the salad and top with the salt and pepper. Mangia 🙂
