Colossal Peanut Butter Cookies

Not only they are light and fluffy, they are also chewy and delicious. It’s amazing. These are as good as they look!


  • 1 C peanut flour
  • 1/3 C olive oil
  • 1 tsp kosher salt
  • 1/2 C whole grain rolled oats
  • 1 egg
  • 1 tsp baking soda
  • 1 C brown sugar

How to:

Combine all ingredients in a bowl. Stir until combined. Use a #12 disher (ice cream scoop) to scoop out dough onto a parchment lined pan. Bake at 350 degrees 16-18 minutes. I topped mine with chopped peanuts but you can leave them out if you don’t have any.
