Banana Muffins with Cream Cheese Frosting

We love bananas! We can’t resist banana bread with cream cheese frosting. It’s one of ourfI favorites. This muffin is less dangerous for the waistline because it only has a tiny dollop of cream cheese frosting! Use the most ripe bananas you can find and you will get a delicious muffin!

  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 2 cups sugar
  • 1 cup vegetable oil
  • 3 large eggs
  • 1 tblsp vanilla extract
  • 4 ripe bananas, peeled and coarsely mashed
  • 3 oz plus 3 T cream cheese, room temp
  • 6 tblsp unsalted butter, room temp
  • 3 tblsp honey
  • 1/2 cup chopped walnuts (optional)

How to:

Preheat the oven to 325°. Line 18 muffin cups with paper liners and then set to the side.

In a medium bowl whisk together the flour, baking soda, salt, baking powder, cinnamon and nutmeg. In a separate bowl beat the sugar, oil, eggs and vanilla to blend. Stir in the banana and then add the dry ingredients to the egg mixture. Do not overbeat the mixture.

Divide the batter amongst the prepared baking cups. Bake the muffins until the tops are golden brown and a tester inserted in the muffins comes out clean. Bake for 20-25 minutes. Transfer the muffins onto a cooling rack while you prepare the frosting.

In the bowl of your stand mixture beat the cream cheese and butter until they are combined then on low, mix in the honey. Pipe the frosting onto the cooled muffins and sprinkle with walnuts.

Try not to eat just one!
