- 1/2 C old fashioned rolled oats
- 1 T peanut butter (or almond butter if you prefer)
- 1/2 banana sliced
- 1 T wildflower honey
- 1/4 granola of your choice ( I love Morning Sunshine Cherry Chunk Blend)
- 1/4 C coconut milk
- 3/4 C water
In a mason jar, add the oats, water, coconut milk. Seal and refrigerate overnight. If you don’t have a lot of time in the morning, add all remaining ingredients except the granola, to the mason jar and let set overnight. Top with the granola in the morning and you are good to go.
If you have some time in the morning, heat the oatmeal by adding a little coconut milk and microwave 30-45 seconds. Then add the banana, top with the granola and a drizzle of honey.
